Fridge organisation is presented as a styling exercise, and several of the rules exist for food safety rather than appearance.
Raw Below Ready-to-Eat
The rule that matters more than anything else in a fridge.
Raw meat, poultry and fish on the lowest shelf, in sealed containers, so nothing can drip onto anything below. Ready-to-eat food, leftovers and anything that will not be cooked again above.
That arrangement prevents the most common route of cross-contamination in a domestic kitchen, and no amount of matching containers substitutes for it.
The Temperature Zones
- The back of the lowest shelf is coldest
- The door is warmest and swings with every opening
- Which is why milk does not belong in the door
- Condiments and shelf-stable items suit the door
- Crisper drawers hold humidity for vegetables
Clear bins that pull out like drawers, of the kind in the fridge ranges at bino.us.org, make the back of a deep shelf reachable, which is where food is forgotten and wasted.
Check the Actual Temperature
Guidance in most countries puts a refrigerator at or below five degrees Celsius, or forty Fahrenheit.
Fridge dials are usually numbered one to five, which is a setting rather than a temperature. A cheap fridge thermometer settles it, and many domestic fridges run warmer than their owners assume.
Freezers should be around minus eighteen Celsius, or zero Fahrenheit.
Do Not Overfill a Fridge
Air has to circulate. A fridge packed solid develops warm pockets, and the areas with least airflow are where things spoil first.
Freezers are the opposite: a full freezer holds its temperature better, and gaps can be filled with bottles of water.
Bins Must Not Block Vents
The practical caution with organising a fridge properly. Cold air enters through vents at the back, and a row of solid bins pushed flat against them restricts it.
Leaving a gap at the back is what keeps the temperature even.
Label and Date the Freezer
Frozen food is safe indefinitely at a proper temperature and declines in quality, so dates are what let you use things in order rather than discovering a mystery in a year.
Flat packages stack and thaw faster, which matters for safety as well as space.
The Weekly Check
Ten minutes before shopping, moving older items forward.
Wipe Spills Immediately
Particularly anything from raw meat.
Clear Containers Get Eaten
Opaque ones get discarded unopened.
